Turmeric cauliflower quinoa salad with tahini dressing

Serves 3 - 4

Ingredients

1 tbs olive oil

½ medium cauliflower sliced

¼ cup quinoa (dry)

1 tsp turmeric powder

120g rocket

5 radishes, sliced

Tahini dressing

3 tbs tahini

1 tbs water

pinch salt

pinch black pepper, optional

Method

1. Heat oven to 180°C.

2. Pop the cauliflower onto a lined tray, sprinkle over the oil and the turmeric.

3. Give it a good mix and bake in the oven until tender (around 25 minutes). Leave to cool.

4. Rinse quinoa very well and cook according to packet instructions. Leave to cool.

5. To make the dressing, add together all the ingredients and stir well.

6. Throw everything into a bowl to combine and then drizzle with the dressing.

Notes

Add more water if needed until you get the dressing consistency you are after.

Sprinkle with some pumpkin seeds for extra crunch.
