450g turkey mince
1 tbs olive oil
1 white onion, diced
1 garlic clove, finely diced (optional)
2 cups of sweet potato, peeled and diced small
¼ tsp salt
2 cups of kale, stemmed and chopped
1 tbsp fresh thyme leaves
1. Heat olive oil in a large pan on a medium heat.
2. Add turkey and garlic and cook for 10 minutes until browed.
3. Set aside mixture in a separate bowl.
4. Using the same pan, add sweet potato and cook until they begin to tenderise.
5. Throw in the kale and salt and cook for futher 5 minutes, stirring frequently.
6. Add back turkey back in and mix well, cooking through for about 4 minutes.
7. Serve with thyme.
